Sear the Duck Breasts
In a large skillet, heat the oil over medium-high heat. Place the duck breasts skin-side down in the skillet and sear for about 6-8 minutes until the skin is crispy and golden brown. Flip and cook for an additional 3-4 minutes. Remove from the skillet and set aside.

In a large wok or a deep pot, add the smoking mixture to the bottom. Place a rack above the mixture to hold the duck breasts. Cover the wok tightly with aluminum foil and heat over medium heat until the mixture begins to smoke (about 5 minutes).
