    Remove the NY strip steak from the refrigerator and let it rest at room temperature for about 30 minutes before cooking. This helps it cook more evenly.

    Generously season both sides of the steak with kosher salt and freshly cracked black pepper, ensuring an even coating.

    In a heavy skillet or cast-iron pan, heat the olive oil over medium-high heat until it begins to shimmer.
