Prepare the Chicken
Season the chicken thighs with salt and black pepper on both sides.

Brown the Chicken
In a large skillet or Dutch oven, heat olive oil over medium-high heat. Once hot, add the chicken thighs, skin-side down. Brown for about 5-7 minutes until golden brown. Flip and brown the other side for an additional 5 minutes. Remove the chicken from the skillet and set aside.

Add Mushrooms and Liquids
Add the sliced mushrooms to the skillet and cook for another 3-4 minutes. Then, pour in the white wine (if using) and let it simmer for 2 minutes, followed by adding the chicken broth, thyme, and bay leaf.

Return the browned chicken thighs to the skillet, skin-side up. Bring the mixture to a gentle simmer, cover, and let cook for 30 minutes, or until the chicken is cooked through.

Once the chicken is cooked, remove it from the skillet. Stir in the heavy cream and adjust seasoning with salt and pepper to taste. Let it simmer for an additional 5 minutes.
