    Prepare the Onions

    In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 15-20 minutes. Season with a pinch of salt. Once done, remove from the skillet and set aside.

    Cook the Veal Liver

    In the same skillet, add the olive oil and heat over medium-high heat. Season the veal liver with salt and black pepper. Add the liver to the skillet and cook for about 3-4 minutes on each side, until browned and cooked through. Avoid overcooking, as liver can become tough.

    Prepare the Sherry Vinaigrette

    In a small bowl, whisk together the sherry vinegar, honey, and fresh thyme. Season with salt and pepper to taste.

    To serve, place the sautéed veal liver on a plate, top with caramelized onions, and crumbled goat cheese. Drizzle with the sherry vinaigrette before serving.
