Pat the Ahi tuna steaks dry with paper towels. This helps to ensure a good sear.

Coarsely grind the black peppercorns using a mortar and pestle or a spice grinder. Sprinkle the ground black pepper and sea salt evenly over both sides of the tuna steaks, pressing it into the fish.
