Assemble the Potstickers
Roll out the rested dough on a floured surface until it's about 1/8 inch thick. Cut circles using a round cutter or a glass. Place about 1 tablespoon of the lamb filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal tightly.

Cook the Potstickers
Heat the cooking oil in a large skillet over medium heat. Place the potstickers in the skillet, making sure not to overcrowd them. Cook for about 2-3 minutes until the bottoms are golden brown. Carefully add 1/2 cup of water to the skillet and cover immediately. Allow the potstickers to steam for about 5-7 minutes until the water evaporates. Remove the lid and let them cook for an additional 2 minutes until the bottoms are crispy.
