    Prepare the Onions

    Peel and thinly slice the yellow onions. Aim for uniform slices to ensure even cooking.

    Sauté the Onions

    In a large pot, melt the unsalted butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes until the onions are caramelized and golden brown.

    Add Garlic

    Once the onions are caramelized, add the minced garlic and sauté for an additional 2-3 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine, scraping the bottom of the pot to deglaze. Allow the wine to simmer for about 5 minutes to reduce slightly.

    Add Broth and Herbs

    Add the beef broth, fresh thyme leaves, bay leaf, salt, and black pepper to the pot. Bring the soup to a gentle simmer.

    Let the soup simmer uncovered for about 30 minutes, allowing the flavors to meld together.

    Prepare the Baguette

    While the soup is simmering, preheat your oven to 350°F (175°C). Slice the baguette into thick slices and arrange them on a baking sheet.

    Toast the Baguette

    Toast the baguette slices in the oven for about 10 minutes or until they are golden and crispy.

    Serve the Soup

    Ladle the soup into bowls. Top each bowl with 1 or 2 slices of toasted baguette and sprinkle generously with grated Gruyère cheese.
