French Onion Soup

Method

Preparation Steps

  1. 1

    Sauté the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced yellow onions and sauté for about 15-20 minutes, stirring frequently, until the onions are caramelized and golden brown.

  2. 2

    Add Garlic

Stir in the minced garlic and cook for an additional 2 minutes until fragrant.

  3. 3

    Deglaze the Pot

Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to simmer for about 5 minutes.

  4. 4

    Add Broth and Seasonings

Add the beef broth, thyme, bay leaves, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes.

  5. 5

    Prepare the Baguette

While the soup is simmering, preheat the oven to 350°F (175°C). Slice the baguette and arrange the slices on a baking sheet. Toast in the oven for 10-15 minutes until crispy.

  6. 6

    Serve the Soup

Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted baguette, and sprinkle with grated Gruyère cheese.

  7. 7

    Melt the Cheese

Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Serve hot.
