Cedar Plank Salmon

    Prepare the Cedar Plank

    Soak the cedar plank in water for at least 1 hour before cooking to prevent it from burning on the grill.

    Make the Glaze

    In a small bowl, mix the brown sugar, Dijon mustard, olive oil, salt, and black pepper until well combined. This will be the glaze for the salmon.

    Prepare the Salmon

    Place the salmon fillet on the soaked cedar plank. Brush the glaze generously over the top of the salmon, ensuring it is evenly coated.

    Preheat the Grill

    Preheat your grill to medium-high heat. Once the grill is hot, place the cedar plank with the salmon directly on the grill grate.

    Cook the Salmon

    Grill the salmon for about 15-20 minutes, or until the internal temperature reaches 145°F (63°C) and the salmon flakes easily with a fork.

    Cook the Pancetta

    While the salmon is grilling, heat a skillet over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

    Wilt the Arugula

    In the same skillet with the pancetta drippings, add the arugula and lemon juice. Toss gently until the arugula is wilted, about 2-3 minutes.

    Serve

    Once the salmon is done, remove it from the grill and let it rest for a few minutes. Serve the salmon on a plate with the wilted arugula and crispy pancetta on the side.
