Preparation

    Prepare the Vegetables

    Peel and dice the butternut squash into 1-inch cubes. Core and chop the apples. Chop the onion and mince the garlic.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 1 minute.

    Add Squash and Apples

    Add the diced butternut squash and chopped apples to the pot. Stir well to combine.

    Add Broth and Spices

    Pour in the vegetable broth and bring the mixture to a boil. Add the ground cinnamon, salt, black pepper, and nutmeg. Reduce the heat to a simmer, cover, and cook for about 20 minutes, or until the squash is tender.

Blending

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth. Return to the pot.

    Add Coconut Milk

    Stir in the coconut milk and heat through over low heat for an additional 5 minutes. Adjust seasoning if necessary.

Serving

    Garnish and Serve

    Ladle the bisque into bowls and garnish with pumpkin seeds and chopped fresh parsley. Serve warm.
