    Prepare the Potatoes

    Peel and cut the potatoes into thin strips to make fries. Rinse them in cold water to remove excess starch and then pat them dry with a kitchen towel.

    Fry the Potatoes

    Heat a deep fryer or a large pot with vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels, season with salt.

    Prepare the Steak

    Season the steaks generously with salt and black pepper on both sides. Let them sit at room temperature for about 30 minutes.

    Cook the Steak

    Heat a skillet over medium-high heat and add olive oil. When the oil is hot, add the steaks and cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Add butter and garlic during the last minute of cooking, basting the steaks with the melted butter.

    Serve

    Remove the steaks from the skillet, let them rest for a few minutes before slicing. Serve the steak with the fries on the side, garnished with chopped fresh parsley.
