    Prepare the Marinade

    In a blender, combine dried guajillo and ancho chiles (remove seeds), garlic, oregano, cumin, salt, black pepper, and lime juice. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into small chunks and place in a bowl. Pour the marinade over the pork, making sure to coat all pieces evenly. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your grill or skillet over medium-high heat. Cook the marinated pork pieces for about 10-15 minutes, turning occasionally until fully cooked and slightly charred.

    Prepare the Pineapple

    While the pork is cooking, grill the pineapple until caramelized, about 5 minutes. Chop into small pieces.

    Assemble the Tacos

    Warm the corn tortillas on the grill or in a pan. Add the cooked pork, grilled pineapple, chopped onions, and cilantro on top. Serve with salsa if desired.
