    Marinate the Chicken

    In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Coating

    In a separate bowl, add the all-purpose flour. Season with additional salt and pepper if desired.

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Chicken

    Remove the chicken pieces from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the seasoned flour, ensuring they are fully coated.

    Fry the Chicken

    Carefully place the flour-coated chicken pieces in the hot oil, frying in batches to avoid overcrowding. Fry for about 12-15 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

    Once cooked, remove the chicken from the oil and drain on paper towels. Serve hot with a side of mac & cheese.
