Prepare the Shrimp
In a large bowl, soak the shrimp in buttermilk for at least 30 minutes.

Mix Dry Ingredients
In a separate bowl, mix together flour, cornmeal, Cajun seasoning, salt, and pepper.

Coat the Shrimp
Remove shrimp from buttermilk and let excess drip off. Dredge shrimp in the flour mixture until well coated.

Heat the Oil
In a deep skillet or fryer, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Fry the shrimp in batches for 3-4 minutes until golden brown and crispy. Drain on paper towels.

Assemble the Po-Boy
Slice the French bread rolls lengthwise. Spread remoulade sauce on both sides, then layer with lettuce, tomatoes, and fried shrimp.

Serve
Close the sandwich and serve immediately with extra remoulade on the side.
