Prepare the Sausage Mixture
In a large mixing bowl, combine the ground pork, cubed pork fat, minced garlic, salt, black pepper, paprika, red pepper flakes, chopped sage, and chopped thyme. Mix thoroughly until well combined.

Prepare the Casings
Rinse the natural sausage casings under cold water and soak them in warm water for about 30 minutes. This makes them more pliable for stuffing.

Stuff the Sausages
Using a sausage stuffer, fill the casings with the sausage mixture, being careful not to overstuff. Tie off the ends of each sausage with kitchen twine.

Cook the Sausages
In a large skillet over medium heat, cook the sausages for about 15-20 minutes, turning occasionally until they are browned and cooked through. Alternatively, grill them on medium heat for similar results.
