    Prepare the Steak

    Thinly slice the ribeye steak against the grain. Season with salt and black pepper.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium-high heat. Add sliced onion, bell pepper, and mushrooms. Sauté until they are soft and slightly caramelized, about 5-7 minutes.

    Cook the Steak

    Push the sautéed vegetables to one side of the skillet. Add the sliced steak to the empty side and cook until browned, about 3-4 minutes. Mix the steak with the vegetables.

    Melt the Cheese

    Place the provolone cheese slices on top of the steak and vegetables. Cover the skillet with a lid for 1-2 minutes, allowing the cheese to melt.

    Assemble the Sandwiches

    Cut the hoagie rolls lengthwise. Fill each roll with the steak and cheese mixture. Serve immediately.
