    Prepare the Oysters

    In a bowl, mix together the cornmeal, flour, cayenne pepper, salt, and black pepper. Dip each oyster into the buttermilk, then dredge in the cornmeal mixture until fully coated.

    Fry the Oysters

    Heat the vegetable oil in a deep pan over medium-high heat. Once hot, carefully add the coated oysters in batches and fry until golden brown, about 2-3 minutes per side. Remove and place on a paper towel-lined plate to drain excess oil.

    Assemble the Po-Boy

    Slice the French bread rolls lengthwise, but not all the way through. Spread a generous amount of remoulade sauce inside each roll. Layer in fried oysters, followed by shredded lettuce and tomato slices.

    Serve

    Serve the oyster po-boys immediately, with extra remoulade sauce on the side if desired.
