    Pat the duck wings dry with paper towels and season with salt and black pepper. Set aside.

    In a large, heavy-bottomed pot or Dutch oven, add the duck fat (or vegetable oil) and heat over medium-low heat until melted.

    Once the fat is melted, add the crushed garlic, thyme, peppercorns, and bay leaves to the pot. Stir to combine and let cook for 2-3 minutes until fragrant.

    Confit the Duck Wings

    Gently add the duck wings to the pot, ensuring they are fully submerged in the fat. If necessary, add more fat or oil to cover the wings completely.

    Cover the pot and cook on low heat for about 2-3 hours, or until the duck wings are tender and the meat is easily pulled from the bone.
