In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Prepare the Soup

Stir in garlic, carrots, and celery. Cook for another 5-7 minutes until the vegetables are softened.

Add Vegetables

Add the crushed tomatoes and vegetable broth. Stir well and bring to a boil.

Reduce heat and add salt, pepper, basil, and thyme. Let it simmer for about 20 minutes.

Using an immersion blender, blend the soup until smooth. Stir in the heavy cream and heat through.
