    Prepare the Potatoes

    Wash and scrub the russet potatoes thoroughly. Slice them thinly using a mandoline or sharp knife, about 1/8 inch thick. Rinse the slices in cold water and pat them dry with paper towels.

    Seasoning Mixture

    In a large bowl, combine the olive oil, chopped fresh rosemary, sea salt, and black pepper. Add the potato slices to the bowl and toss until they are evenly coated with the oil and seasoning.

    Frying the Chips

    Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully add the potato slices in batches, frying until they are golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to remove the chips and place them on a paper towel-lined plate to drain excess oil.

    Once all chips are fried, allow them to cool slightly. Serve immediately with your choice of bleu cheese or ranch dipping sauce.
