    Prepare the Onions

    Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and cook, stirring frequently until they are caramelized, about 30-40 minutes.

    Add Garlic and Deglaze

    Add minced garlic and cook for an additional 1-2 minutes until fragrant. Then, pour in the white wine to deglaze the pot, scraping up any brown bits from the bottom.

    Add Broth and Simmer

    Pour in the beef broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and let cook for 20 minutes to allow the flavors to meld.

    Finish the Soup

    Stir in the heavy cream and remove the bay leaf. Adjust seasoning with more salt and pepper if necessary.

    Prepare the Bread

    While the soup is simmering, slice the French baguette and toast the slices until golden brown. Top each slice with Gruyère cheese and broil until melted.

    Ladle the soup into bowls and top with the toasted baguette slices covered in melted Gruyère cheese.
