Prepare Honey Dijon
In a small bowl, mix together honey and Dijon mustard until well combined. Set aside.

Assemble Sandwich
Spread Cajun seasoning evenly on one side of each slice of sourdough bread. On the unseasoned side, layer two slices of jack cheese on two slices of bread.

Grill the Sandwich
Heat a skillet over medium heat. Spread butter on the outer sides of the assembled sandwiches. Place the sandwiches in the skillet, cooking until golden brown and the cheese is melted, about 3-4 minutes on each side.

Serve
Remove from skillet, cut in half, and serve warm with a side of honey Dijon for dipping.
