Cut the Fries
Using a sharp knife, cut the potatoes into thin strips, approximately 1/4 inch thick. Ensure the strips are even for uniform cooking.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the cut potato strips to the hot oil in small batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle the fries with salt and black pepper to taste.

Transfer the seasoned shoestring fries to a serving platter and enjoy immediately while they're hot and crispy!
