Method

Preparing the Gouda Grits

    Cooking the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt. Reduce the heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened.

    Adding Gouda

    Once the grits are cooked, remove from heat and stir in the butter and shredded Gouda cheese until melted and creamy. Season with black pepper to taste.

Braised Beef Shank

    Searing the Shank

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the beef shank with salt and black pepper. Sear the shanks on all sides until browned, about 5-7 minutes. Remove from the pot and set aside.

    Sautéing Vegetables

    In the same pot, add chopped onions, carrots, and celery. Sauté for about 5-6 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

    Braising the Shank

    Return the beef shank to the pot. Add the beef broth, bay leaves, and thyme. Bring to a simmer, cover, and reduce heat to low. Cook for about 2-3 hours until the meat is tender and falling off the bone.

    Shredding the Meat

    Once cooked, remove the beef shank from the pot and let it rest for a few minutes. Shred the meat using two forks and discard any bones or excess fat.

Fried Eggs and Biscuit

    Frying the Eggs

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack in the eggs and fry until the whites are set and the yolks are cooked to your liking, about 3-4 minutes.

    Heating the Biscuit

    If using store-bought biscuits, heat them according to package instructions. If homemade, warm them in the oven for a few minutes until heated through.
