Preparing the Salad

    Prepare the spinach

    Rinse the baby spinach under cold water and pat dry with a clean kitchen towel or use a salad spinner to remove excess water. Place the cleaned spinach in a large salad bowl.

    Add chicken

    Take the cooked chicken breast and shred it into bite-sized pieces. Add the shredded chicken on top of the spinach in the bowl.

    Slice the pears

    Wash the pears, cut them in half, remove the core, and slice them thinly. Arrange the pear slices over the chicken and spinach.

    Prepare the onions

    Peel the red onion and slice it thinly. Scatter the onion slices over the salad.

    Cook and crumble the bacon

    Cook the bacon in a skillet over medium heat until crispy. Remove from heat, allow to cool slightly, then crumble the bacon and sprinkle it on top of the salad.

    Add goat cheese

    Crumble the goat cheese and distribute it evenly over the salad.

Dressing the Salad

    Add the dressing

    Pour the raspberry vinaigrette evenly over the salad. Use as much as desired, but start with about half a cup and then adjust to taste.

    Toss the salad

    Gently toss all the ingredients together in the salad bowl until everything is well coated with the dressing.

    Serve

    Divide the salad into portions and serve immediately. Enjoy your delicious Santorini Salad!
