Add mustard seeds, black peppercorns, red pepper flakes, and dill seeds to the saucepan. Bring the mixture to a boil over medium-high heat.

Once boiling, reduce the heat and let the brine simmer for about 5 minutes. Remove from heat and allow it to cool for a few minutes.
Packing and Storing

Pack the Jars
In clean, sterilized jars, start layering the vegetables. Begin with cucumbers, followed by carrots, bell peppers, red onion, and garlic cloves. Pack them tightly but avoid crushing.

Carefully pour the warm brine over the packed vegetables, ensuring they are fully submerged. Leave about 1/2 inch of headspace at the top of the jars.

Seal the jars tightly with lids. Allow them to cool at room temperature, then store them in the refrigerator for at least 24 hours before consuming. For extended storage, consider water-bath canning.
