Prepare the Cheese Mixture
In a large mixing bowl, combine the cream cheese, shredded sharp cheddar cheese, diced pimentos, and mayonnaise. Mix until well combined and creamy.

Season the Mixture
Add garlic powder, onion powder, salt, and black pepper to the cheese mixture. Stir until all spices are evenly distributed. Adjust seasoning to taste.

Refrigerate
Cover the pimento cheese with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
Boiled Egg Candied Jalapeños

Boil the Eggs
Place the large eggs in a pot and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the pot and turn off the heat. Let the eggs sit for 10-12 minutes.

Prepare Candied Jalapeños
In a saucepan, combine the sliced jalapeños, sugar, apple cider vinegar, and water. Bring to a boil, then reduce heat and simmer for 10 minutes until the jalapeños are tender and the syrup thickens.

Assemble
Top each egg half with a spoonful of candied jalapeños.

Prepare the Cucumber
Slice the cucumber into rounds and arrange them on the serving board.

Place the pimento cheese in a bowl on the serving board. Arrange the boiled egg halves with candied jalapeños, sliced cucumber, and bagel chips around the cheese.
