Preparation
- 1
Prepare the Fruits
Wash the strawberries, blueberries, and raspberries thoroughly under cold running water. Remove any stems and leaves from the strawberries and cut them into halves or quarters if they are large. Leave the blueberries and raspberries whole.
- 2
Sterilize the Canning Jars
Place the canning jars in a large pot of water and bring to a boil. Let them boil for 10 minutes. Remove the jars from the pot using the jar lifter and set them on a clean towel to dry.
Cooking
- 3
Combine Ingredients
In a large pot, combine the prepared strawberries, blueberries, and raspberries. Add the granulated sugar and lemon juice. Stir well to incorporate the sugar and juice with the fruits.
- 4
Cook the Mixture
Cook the mixture over medium heat, stirring frequently until the sugar dissolves completely. Increase the heat to high and bring the mixture to a rolling boil. Boil for 10 minutes, stirring constantly.
- 5
Add Pectin
Once the mixture reaches a rolling boil, add the pectin according to the package instructions. Stir well and continue to boil for an additional 1-2 minutes until the mixture thickens.
- 6
Check the Consistency
Use a candy thermometer to check the temperature of the mixture. It should reach 220°F (104°C) for proper gel formation. If you don't have a thermometer, you can test the consistency by placing a spoonful of the mixture on a cold plate and running your finger through it. If it holds its shape, it's ready.
Canning
- 7
Fill the Jars
Using a ladle, carefully fill the sterilized canning jars with the hot fruit mixture, leaving about 1/4 inch of headspace at the top of each jar.
- 8
Seal the Jars
Wipe the rims of the jars with a clean cloth to remove any residue. Place the sterilized lids on top of each jar and screw on the metal bands until they are fingertip-tight.

- 10
Cool and Store
Remove the jars from the boiling water using the jar lifter and place them on a clean towel. Let them cool completely. Once cooled, check the seals by pressing down on the center of each lid. If it doesn't pop back, the jar is sealed. Store the sealed jars in a cool, dark place.
