Hummus Preparation

    Prepare the Ingredients

    In a food processor, combine the mango puree, chickpeas, tahini, sriracha sauce, minced garlic, lemon juice, olive oil, salt, and pepper.

    Blend the Hummus

    Blend until smooth. If the mixture is too thick, add a little water to reach your desired consistency. Taste and adjust seasoning if necessary.

Fries Preparation

    Slice the Potatoes

    Wash and peel the potatoes. Cut them into thin strips to make shoestring fries.

    Season and Bake the Fries

    In a bowl, toss the potato strips with olive oil, salt, and pepper. Spread them on a baking sheet and bake at 425°F (220°C) for 20-25 minutes or until golden and crispy, flipping halfway through.

    Toast the Bread

    Toast the 9-grain bread slices to your desired crunchiness.

    Prepare the Vegetables

    Slice the avocado, cucumber, red onion, and bell pepper thinly.

    Assemble the Sandwich

    Spread a generous layer of mango sriracha hummus on one side of each slice of toasted bread. Layer the avocado slices, cucumber, red onion, bell pepper, and arugula on top of the hummus. Drizzle the honey balsamic dressing over the vegetables.

    Top and Serve

    Close the sandwich with the other slice of bread, cut in half if desired, and serve with the baked shoestring fries on the side.
