Make the Aioli
In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined. Taste and adjust seasoning if needed. Set aside.
Assembling the Flatbread

Prepare the Flatbread
Preheat the oven to 400°F (200°C). Place the flatbreads on a baking sheet.

Spread the Aioli
Spread a generous layer of the garlic aioli over each flatbread, ensuring even coverage.

Add Toppings
Evenly distribute the cooked crawfish tails over the aioli, followed by the thinly sliced red onions. Sprinkle the crumbled goat cheese evenly on top.
Baking

Bake the Flatbread
Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the flatbread is golden and crispy.

Garnish with Arugula
Remove the flatbreads from the oven and immediately top with fresh arugula. Slice into pieces and serve warm.
