Preparing the Beef

    Braised Beef Shank

    In a large pot, sear the beef shank on all sides over medium-high heat until browned. Remove and set aside.

    Add Vegetables

    In the same pot, add diced onions and bell peppers. Sauté until softened, about 5 minutes. Return beef shank to the pot.

    Braising

    Add enough water or beef broth to cover the beef. Bring to a boil, then reduce to a simmer. Cover and let braise for 2-3 hours until the beef is tender.

Making the Garlic Aioli

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Stir until well blended.

    Chill Aioli

    Cover and refrigerate for at least 30 minutes to allow flavors to meld.

Assembling the Cheese Melt

    Shred the Beef

    Once the beef shank is tender, remove it from the pot and shred it using two forks.

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Bread

    Slice the French bread in half lengthwise. Place the shredded beef evenly on each half, then top with sliced pepperjack cheese.

    Melt the Cheese

    Place the bread halves on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.

Serving

    Remove from the oven and drizzle with garlic aioli. Cut into portions and serve hot.
