Braised Beef Shank

    Sear the Beef

    In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Season the beef shank with salt and black pepper. Sear the beef shank on all sides until browned, about 4-5 minutes per side. Remove from pot and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables start to soften. Add minced garlic and sauté for another minute until fragrant.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to deglaze, cooking for about 2-3 minutes to reduce slightly.

    Add Broth and Herbs

    Add the beef broth, bay leaves, and thyme to the pot. Return the beef shank to the pot and bring to a gentle simmer.

    Braise the Beef

    Cover the pot and lower the heat to maintain a gentle simmer. Braise for about 2.5 to 3 hours, or until the beef is tender and falling off the bone.

    Finish and Serve

    Remove the beef shank from the pot and let it rest for a few minutes before slicing. Strain the braising liquid if desired and serve alongside the beef.

    Cook the Grits

    In a large saucepan, bring the water to a boil. Gradually whisk in the grits and a pinch of salt. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes until thickened.

    Remove from heat and stir in the shredded Gouda cheese and butter until melted and creamy. Adjust seasoning with additional salt if needed.

    Preheat your oven to 450°F (230°C).

    In a large bowl, whisk together the flour, baking powder, and salt.

    Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Milk and Form Dough

    Pour in the milk and stir until just combined. Do not overmix. Turn the dough onto a floured surface and pat into a 1-inch thick round.

    Use a biscuit cutter or a glass to cut out biscuits. Place them on a baking sheet lined with parchment paper.
