Braised Beef

    Sear the Beef

    In a large pot, heat olive oil over medium-high heat. Season the beef shank with salt and pepper, then sear on all sides until browned. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Broth and Spices

    Return the beef to the pot and add the beef broth, bay leaves, and thyme. Bring to a simmer.

    Braise the Beef

    Cover the pot and reduce the heat to low. Let it braise for 3-4 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Remove the beef from the pot and shred it with two forks. Return the shredded beef to the pot to soak in the juices.

Sandwich Assembly

    Prepare the Vegetables

    While the beef is braising, slice the bell pepper and onion.

    Assemble the Sandwich

    Cut the French bread loaf in half lengthwise. Layer the shredded braised beef, sautéed bell pepper, and onion on the bottom half of the bread. Top with pepper jack cheese.

    Melt the Cheese

    Place the sandwich under a broiler for a few minutes until the cheese is melted and bubbly.

    Close the Sandwich

    Top with the other half of the bread and slice into portions.

Shoestring Fries

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the shoestring potatoes to the hot oil in batches. Fry until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Remove fries from the oil and drain on paper towels. Immediately season with salt.
