Bacon Jam Preparation

Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, reserving the fat.

Combine Ingredients
Chop the cooked bacon and add it back to the skillet with onions. Stir in brown sugar, apple cider vinegar, black pepper, and maple syrup.

Simmer the Jam
Reduce the heat to low and let it simmer for 20-30 minutes, stirring occasionally, until thick and jam-like. Set aside to cool.

Melt the Cheese
In the last minute of cooking, place a slice of Pepper Jack cheese on each patty to melt.

Prepare the Buns
Toast the burger buns lightly on the grill or in a toaster.

Assemble the Burger
Spread mayonnaise on the bottom half of each bun. Place the cooked burger patty with melted cheese on top, followed by bacon jam, lettuce, tomato slices, and onion slices. Top with the other half of the bun.

Serve with Fries
Prepare shoestring fries according to package instructions and serve alongside the burgers.
