Polenta and Meatballs Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Polenta

In a saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt. Gradually whisk in 1 cup of polenta. Reduce heat to low and stir frequently until thickened, about 15-20 minutes. Set aside.

  2. 2

    Make the Meatballs

In a large bowl, combine 1 lb of ground beef or turkey, 1 cup of breadcrumbs, 1 egg, 2 tsp of minced garlic, and 1 tsp of Italian seasoning. Mix well and form into meatballs.

  3. 3

    Cook the Meatballs

In a skillet, heat 2 tbs of olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Pour in 2 cups of tomato sauce and simmer for another 10 minutes.

  4. 4

    Serve

To serve, place a portion of polenta on a plate, top with meatballs and tomato sauce, and sprinkle with grated Parmesan cheese and chopped basil.
