    Prepare the Asparagus

    Trim the asparagus ends and steam or blanch them in salted water for 3-4 minutes until tender-crisp. Drain and set aside.

    Cook the Salmon

    Season the salmon fillets with salt and black pepper. Heat olive oil in a skillet over medium-high heat and add the salmon, skin-side down. Cook for 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until the salmon is cooked through. Remove from heat.

    Make the Hollandaise Sauce

    In a double boiler or heatproof bowl over simmering water, whisk together egg yolks and lemon juice until thickened. Gradually whisk in melted butter until the sauce is smooth and creamy. Season with salt and cayenne pepper.

    Plate the salmon fillets alongside the asparagus and drizzle with hollandaise sauce. Serve immediately.
