Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.

Prepare the Breading Station
In one bowl, place the flour mixed with black pepper and cayenne pepper. In another bowl, pour the buttermilk. In a third bowl, add the cornmeal.

Breading the Tomatoes
Dredge each tomato slice first in the flour mixture, then dip in the buttermilk, and finally coat with cornmeal.

Frying the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, frying until golden brown on each side, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Make the Remoulade
In a bowl, mix together mayonnaise, Dijon mustard, lemon juice, minced garlic, chopped capers, and parsley. Adjust seasoning with salt and pepper to taste.

Serve the fried green tomatoes hot with a side of the remoulade for dipping.
