Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together in the microwave in 30-second intervals, stirring in between, until smooth and combined.
- 3
Mix Eggs and Sugar
In a separate bowl, whisk together the large eggs, egg yolk, and granulated sugar until the mixture is light and fluffy.
- 4
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously. Add in the vanilla extract and a pinch of salt.
- 5
Add Flour
Gently fold in the all-purpose flour until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 7
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
- 8
Serve
Remove from the oven and let cool for 1 minute. Carefully run a knife around the edges of the cakes, then invert onto plates. Serve immediately and enjoy the molten center!
