Preparation

Prepare the Onion

Slice the large onion into thin rings.

Prepare the Roast Beef

If not pre-sliced, thinly slice the roast beef against the grain.

Prepare the Cheddar Cheese

Shred or slice the cheddar cheese into manageable pieces.

Cooking

Sauté the Onions

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté for about 8-10 minutes until they are caramelized and golden brown. Season with salt and black pepper to taste.

Heat the Roast Beef

In the same skillet, add the sliced roast beef to the pan with the sautéed onions. Heat for 2-3 minutes until warmed through.

Melt the Cheddar Cheese

Sprinkle the shredded cheddar cheese over the warm roast beef and onions. Cover the skillet with a lid for 2 minutes or until the cheese is melted.

Assembly

Prepare the Bread

If using sub rolls, slice them open. If using sandwich bread, lay out the slices.

Assemble the Sandwich

Spread 1 tablespoon of horseradish sauce on the inside of each bread piece. Evenly distribute the cheesy roast beef and sautéed onions onto the bread. Top with additional horseradish sauce if desired.

Serve

Cut the sandwiches in half if desired and serve immediately while warm.
