Seafood and Sauce

Method

Preparation

  1. 1

    Cook the Seafood

In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add the scallops and shrimp, cooking until they are just opaque, about 2-3 minutes per side. Remove from skillet and set aside.

  2. 2

    Sauté Garlic

In the same skillet, add the remaining butter and minced garlic. Sauté for about 30 seconds until fragrant.

  3. 3

    Add Wine and Cream

Pour in the white wine and let it simmer for about 2-3 minutes. Then, stir in the heavy cream, salt, and black pepper. Bring to a gentle simmer.

  4. 4

    Cook the Clams and Mussels

Add clams and mussels to the skillet, cover, and cook for about 5-7 minutes until they open. Discard any that do not open.

  5. 5

    Combine Seafood

Return the scallops and shrimp to the skillet, and stir in the chopped parsley. Let it cook for an additional 2 minutes.

  6. 6

    Serve

Serve the seafood scampi warm with pita bread on the side.
