Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries in batches to the hot oil and fry until golden brown and crispy, about 5-7 minutes.

Drain and Season
Remove the fries from the oil and drain on paper towels. While still hot, toss them in a large bowl with Cajun seasoning and salt until evenly coated.

Serve
Serve the Cajun fries hot as a delicious side dish or snack.
