Instructions for Making Pita Bread

    Activate the Yeast

    In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dry Ingredients

    In a large bowl, combine the flour and salt.

    Combine Ingredients

    Make a well in the center of the flour mixture and pour in the frothy yeast mixture and olive oil. Stir until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pitas

    Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten into a disc about 1/4 inch thick.

    Second Rise

    Cover the discs with a cloth and allow them to rise for another 30 minutes.

    Preheat Oven

    Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet in the oven to heat.

    Bake the Pitas

    Carefully place the risen discs on the hot baking stone or sheet. Bake for 5-7 minutes or until they puff up and are lightly browned.

    Cool and Store

    Remove the pitas from the oven and let them cool on a wire rack. Store in an airtight container.
