Prepare the Red Rice

In a medium saucepan, combine 1 cup of red rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes or until rice is tender and water is absorbed.

Prepare the Broccoli

While the rice is cooking, steam the broccoli florets. Bring a pot of water to a boil and place a steamer basket over it. Add the broccoli, cover, and steam for about 5-7 minutes until tender but still bright green.

Season the Tilapia

Pat the tilapia fillets dry with paper towels. Season both sides with Cajun seasoning, salt, and black pepper.

Make the Cajun Garlic Butter

In a skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it. Stir in additional Cajun seasoning if desired.

Cook the Tilapia

In the same skillet, add olive oil and heat over medium-high heat. Add the seasoned tilapia fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Drizzle with the Cajun garlic butter while cooking.

Serve

Plate the tilapia and drizzle more Cajun garlic butter on top. Serve alongside the red rice and steamed broccoli. Garnish with lemon wedges.
