Prepare the Ingredients

Gather and prepare all ingredients, including chopping the vegetables and slicing the sausages.

Sauté the Sausages and Vegetables

In a large pot, heat olive oil over medium heat. Add the chicken-pork sausages and cook until browned. Then add the onion, garlic, celery, and bell pepper. Sauté for about 5 minutes until softened.

Add Remaining Ingredients

Stir in the okra, corn, diced tomatoes, bay leaves, Cajun seasoning, salt, and black pepper. Mix well.

Simmer the Gumbo

Pour in the chicken broth and bring the mixture to a boil. Reduce heat and let it simmer for about 30 minutes, stirring occasionally.

Add Shrimp

Add the shrimp to the pot and cook for an additional 5-7 minutes until they are pink and cooked through.

Serve

Remove bay leaves and adjust seasoning if necessary. Serve hot over cooked rice if desired.
