Prepare the oysters
Rinse the fresh oysters under cold water, removing any grit or debris. Pat them dry with paper towels.

Make the batter
In a mixing bowl, combine the flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, whisk together the eggs and milk.

Batter the oysters
Dip each oyster into the egg mixture, allowing excess to drip off, then dredge in the flour mixture until well coated.

Heat the oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the oysters
Carefully add the battered oysters to the hot oil in batches. Fry for about 2-3 minutes or until golden brown, turning occasionally.

Drain and serve
Using a slotted spoon, remove the oysters from the oil and transfer them to a paper towel-lined plate to drain excess oil. Serve hot with cocktail sauce.
