Prepare the Chicken Tenders
In a bowl, mix flour, cornstarch, Cajun seasoning, salt, and pepper. In another bowl, whisk the eggs and buttermilk together. Dip each chicken tender first in the flour mixture, then in the egg mixture, and finally coat with bread crumbs.

Fry the Chicken Tenders
Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken tenders in batches for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Cajun Fries
Cut the potatoes into fries and soak them in water for 30 minutes. Drain and pat dry. Toss the fries in Cajun seasoning and fry them in hot oil until crispy, about 4-6 minutes. Remove and drain on paper towels.

Serve the crispy chicken tenders with Cajun fries and a side of ranch dressing for dipping.
