Preparation
Prepare the Onions
Peel the large onions and slice them into thick rings, about 1/2 inch thick. Separate the rings and set them aside.
Make the Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk to combine. Gradually add the cold sparkling water to the dry ingredients while whisking until the batter is smooth and slightly thick.
Frying
Heat the Oil
In a deep frying pan or pot, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; if it sizzles, it's ready.
Coat the Onion Rings
Dip each onion ring into the batter, making sure it's fully coated. Allow any excess batter to drip off.
