Method
Preparation
Mix Dry Ingredients
In a large mixing bowl, combine cornmeal, all-purpose flour, baking powder, salt, and sugar. Whisk together until evenly mixed.
Prepare Wet Mixture
In a separate bowl, beat the egg and then stir in the buttermilk and finely chopped onion until well combined.
Combine Mixtures
Pour the wet mixture into the dry ingredients. Stir just until combined; do not overmix.
Frying
Heat Oil
In a deep skillet or heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Shape Hush Puppies
Using a spoon or cookie scoop, drop small balls of the batter (about 1-2 tablespoons) into the hot oil, being careful not to overcrowd the pan.
Fry Until Golden
Fry the hush puppies for about 3-4 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
Serve
Serve warm as a starter for your seafood feast.
