Preparation
Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels. Set aside.
Batter Mixing
Mix the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Whisk together until well combined.
Add Water
Gradually add cold water to the dry mixture, whisking until you achieve a smooth batter. The batter should be thick enough to coat the shrimp.
Frying
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.
Coat the Shrimp
Dip each shrimp into the batter, ensuring they are fully coated.
Fry the Shrimp
Carefully place the battered shrimp into the hot oil, a few at a time, making sure not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and crispy.
Drain the Shrimp
Once cooked, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

Arrange the fried shrimp on a serving plate and serve hot with your choice of tartar sauce or cocktail sauce.
