Clean the Oysters

Rinse the fresh oysters under cold running water to remove any sand or debris. Pat them dry with a clean towel.

Prepare the Batter

In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. Mix well. Gradually add the buttermilk to the dry ingredients, whisking until you have a smooth batter.

Heat the Oil

In a deep frying pan or pot, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles immediately, it's ready.

Coat the Oysters

Dip each oyster into the batter, ensuring they are fully coated.

Fry the Oysters

Carefully place the battered oysters into the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 3-4 minutes or until they turn golden brown and crispy.

Drain and Serve

Once fried, remove the oysters from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot with your choice of dipping sauce.
